But then 'Tis the Season Pork Tenderloin decides to bring out the festive flavors with a cranberry chipotle sauce that mixes heat with just the right amount of spice to warm you right up when the weather gets cold. Ingredients
- 1 teaspoon garlic salt
- 1/2 teaspoon ground dry mustard
- 1 pound pork tenderloin
- 2 tablespoons olive oil
- 3 tablespoons honey
- 1 can chipotle pepper in adobo sauce, finely minced
- 1 cup whole cranberries, coarsely chopped
- 1 small clove garlic, minced
- 2 teaspoons fresh lemon juice
- 1/2 cup brown sugar, or to taste
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -Mix the garlic salt and the dry mustard in a small bowl.
Step 3 -Rub the spice mixture over the pork.
Step 4 -Line a roasting pan with foil and coat a rack with cooking spray.
Step 5 -Place the pork on the prepared rack and place the rack on the prepared roasting pan.
Step 6 -Roast the pork in the oven for 30 minutes.
Step 7 -Mix the olive oil and the honey in a small bowl.
Step 8 -Brush the oil and honey mixture over the pork and cook until the internal temperature of the pork reaches 160 degrees F, about 10 minutes.
Step 9 -Combine the chipotle peppers, the cranberries, the minced garlic, the lemon juice, and the brown sugar in a small heavy-bottomed pot.
Step 10 -Bring the mixture to a boil over medium-high heat, stirring constantly.
Step 11 -Reduce the heat to low and cook, stirring occasionally, until thickened, about 10-15 minutes.
Step 12 -Slice the pork and serve with the pan juice and the cranberry chipotle sauce.
