Denizens of the Lone Star State have plenty to look forward to during their day, and they need the right fuel to do it! Fortunately, they know just the breakfast for the job! Texas's Favorite Breakfast features fajita-style eggs, with classic onions and peppers, delicately seasoned and roasted until tender and bright. The eggs are savory and the toppings bring all the borderland flavor you could want! Texas's Favorite Breakfast proves that everything, including flavor, is bigger in Texas.
Ingredients
- For the breakfast:
- 1 small sweet potato, peeled and cut into 1/4-inch-thick half moons
- 2 tablespoons olive oil
- 1 red pepper, quartered, sliced crosswise
- 1 yellow pepper, quartered, sliced crosswise
- 1 red onion, cut into 1/4-inch-thick wedges
- 1/2 teaspoon ground cumin
- 1/2 teaspoon kosher salt, plus more, to taste
- 1/2 teaspoon pepper, plus more, to taste
- 8 large eggs
- 1/2 cup extra-sharp white cheddar, coarsely grated
- 1/2 lime
- Optional, for serving:
- cilantro, to taste, chopped
- jalapeño, to taste, sliced
- 8 medium flour tortillas, warmed
- avocado, to taste, diced
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -On a large, rimmed baking sheet, add the sweet potatoes and the oil and toss together.
Step 3 -Add the red peppers, the yellow peppers, the onions, the cumin, 1/2 teaspoon of the salt, and 1/2 teaspoon of the pepper to the sweet potatoes and toss until well-coated.
Step 4 -Roast the vegetable mixture for 15 minutes.
Step 5 -Transfer the baking sheet from the oven and toss the vegetables before arranging them to make 8 empty spaces in between.
Step 6 -Crack 1 of the eggs into each empty space and season the eggs with the extra salt and the extra pepper.
Step 7 -Sprinkle the cheese over the vegetable-egg mixture.
Step 8 -Roast until the egg whites are firm and the yolks reach your desired doneness, about 5-8 minutes.
Step 9 -Transfer the baking sheet from the oven and squeeze the lime over the vegetable-egg mixture.
Step 10 -Sprinkle the vegetable-egg mixture with the cilantro and the jalapeños.
Step 11 -Spoon the vegetable-egg mixture into the warm tortillas.
Step 12 -Serve topped with the avocado.
