The delicate sea breezes. The heady taste of salt in the air. The wondrous bounty of the ocean. You may not live near the beach, but your taste buds will find their own beach vacation in the Ocean Prime Penne! Tender penne pasta and wonderfully savory yet sweet shrimp mix together in a freshly made tomato sauce. Mmm, and that sauce even has oceanic depths to it! It's creamy, rich, bright, and herbaceous with a hint of delectable clams infusing every little drop! Ocean Prime Penne is number one!
Ingredients
- 1 pound penne pasta
- 1/4 cup olive oil
- 1 pound medium shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1/2 teaspoon kosher salt, plus more, to taste
- 1/2 teaspoon freshly ground black pepper, plus more, to taste
- 1 (15-ounce) can whole tomatoes, drained and roughly chopped
- 1/2 cup fresh basil leaves, chopped, divided
- 1/2 cup fresh flat-leaf parsley, chopped, divided
- 1/4 teaspoon crushed red pepper flakes
- 1 cup white wine
- 1/3 cup clam juice
- 3/4 cup heavy whipping cream
- 1/2 cup parmesan, grated, divided
Directions
Step 1 -Bring a large pot of salted water to a boil.
Step 2 -Cook the pasta in the boiling water, while stirring occasionally, until the pasta is al dente, according to the package directions.
Step 3 -Drain the pasta.
Step 4 -In a large skillet over medium-high heat, heat the olive oil.
Step 5 -Add the shrimp, the garlic, 1/2 teaspoon of the salt, and 1/2 teaspoon of the pepper and cook, while stirring frequently, until the shrimp turn pink and the meat reaches an internal temperature of 145 degrees F, about 3 minutes.
Step 6 -Using a slotted spoon, transfer the shrimp to a plate.
Step 7 -Add the tomatoes, 1/4 cup of the basil, 1/4 cup of the parsley, and the red pepper flakes and cook, while stirring constantly, until the tomatoes begin to soften slightly, about 2 minutes.
Step 8 -Add the wine, the clam juice, and the heavy cream and bring the mixture to a boil.
Step 9 -Reduce the heat to medium-low.
Step 10 -Simmer until the sauce thickens, about 7-8 minutes.
Step 11 -Add 1/4 cup of the parmesan, the cooked shrimp, the cooked pasta, the remaining basil, and the remaining parsley to the sauce and toss until everything is coated.
Step 12 -Taste the sauce and pasta for seasoning and adjust with the extra salt and the extra pepper as needed.
Step 13 -Transfer the pasta to a serving bowl and sprinkle it with the remaining parmesan.
Step 14 -Serve.
