Ingredients

  • 1 (6-ounce) package stuffing mix
  • 3/4 cup butter, melted
  • 3 cups zucchini, diced
  • 2 cups chicken breast, cooked, cubed
  • 1 (10.75-ounce) can condensed cream of chicken soup, undiluted
  • 1 medium carrot, shredded
  • 1/2 cup onion, chopped
  • 1/2 cup sour cream

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Grease a 7x11-inch baking dish.

Step 3 -In a large bowl, add the stuffing mix and the melted butter and mix well.

Step 4 -In a small bowl, set aside 1/2 cup of the stuffing mix for the topping.

Step 5 -Add the zucchini, the chicken breast, the cream of chicken soup, the carrot, the onion, and the sour cream to the remaining stuffing mixture and mix well.

Step 6 -Transfer the chicken breast mixture to the prepared baking dish and evenly sprinkle with the reserved stuffing mixture.

Step 7 -Bake the casserole, uncovered, until it is golden-brown and bubbly, about 40-45 minutes.

Step 8 -Plate and serve.
