Ingredients
- For the mango relish:
- 1 mango, chopped
- 1 cup canned pineapple chunks, drained
- 1 small orange or clementine, segmented
- 1/4 cup red onion, chopped
- 1 small banana pepper, sliced
- 1 teaspoon orange peel, finely shredded
- 1/4 cup orange juice
- 1/8 teaspoon cayenne pepper
- For the pork chops:
- 4 (4-ounce) pork loin chops, bone-in, pounded to 1/4-inch thickness
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 tablespoon olive oil
- 1/2 cup orange juice
- 2 teaspoons honey
- 1/2 cup water
- cilantro leaves, to taste, for garnish
Directions
Step 1 -In a large bowl, add the mangoes, the pineapple chunks, the orange segments, the red onions, the banana peppers, the orange peel, 1/4 cup of the orange juice, and the cayenne pepper and stir to combine.
Step 2 -Sprinkle both sides of the pork chops evenly with the chili powder, the salt, and the black pepper.
Step 3 -In a large skillet over medium-high heat, add the olive oil.
Step 4 -Add the seasoned pork chops, 2 at a time, to the heated olive oil and cook until they are browned, about 3 minutes per side.
Step 5 -Transfer the browned pork chops to a plate and repeat the cooking process with the remaining seasoned pork chops.
Step 6 -In a small bowl, add the remaining orange juice and the honey and whisk to combine.
Step 7 -Reduce the heat to low. Add the cooked pork chops, the orange juice-honey mixture, and the water to the same skillet.
Step 8 -Cover the skillet and bring the pork chop mixture to a simmer. Cook until the meat reaches an internal temperature of 145 degrees F, about 5 minutes.
Step 9 -Spoon the mango relish over the pork chop mixture and simmer, covered, about 1 minute.
Step 10 -Transfer the pork chop mixture to a clean plate and cover to keep warm, reserving the juices in the skillet.
Step 11 -Increase the heat to high. Simmer the juices in the skillet until they have reduced by half, about 5 minutes.
Step 12 -Plate the pork chops topped with the mango relish and drizzled with the sauce.
Step 13 -Serve the pork chops garnished with the cilantro.
