Whatever holiday you are celebrating, having a large group around for the festivities isn't uncommon, and you have to have enough food around to fill them up! It can get exhausting to make feast after feast, though, and thanks to Holiday Brunch Casserole, you can knock out two mealtimes with one delicious, hearty dish! It's easy, too! The night before, all you do is toss together some crunchy hash browns, spicy sausage, salty bacon, crisp green pepper, sweet onion, and gooey cheese. Then you top it with a savory biscuit mix and lots more cheese. Chill it overnight and then bake when your guests awaken; Holiday Brunch Casserole is sure to be a festive hit!
Ingredients
- 4 cups frozen shredded hash brown potatoes, thawed
- 1 pound bulk pork sausage, cooked and drained
- 1/2 pound bacon strips, cooked and crumbled
- 1 medium green pepper, chopped
- 1 green onion, chopped
- 2 cups cheddar cheese, shredded and divided
- 4 large eggs
- 3 cups 2% milk
- 1 cup reduced-fat biscuit mix
- 1/2 teaspoon salt
Directions
Step 1 -Grease a 9x13-inch baking dish.
Step 2 -In a large bowl, combine the hash browns, sausage, bacon, green pepper, green onion, and 1 cup of cheese.
Step 3 -Transfer the hash brown mixture to the prepared baking dish.
Step 4 -In another bowl, whisk the eggs, milk, biscuit mix, and salt until blended.
Step 5 -Pour the biscuit mixture over the hash brown mixture. Sprinkle the casserole with the remaining cheese.
Step 6 -Cover the dish and refrigerate for at least 8 hours and up to overnight.
Step 7 -Preheat the oven to 375 degrees F.
Step 8 -Transfer the casserole from the refrigerator while the oven heats.
Step 9 -Bake, uncovered, until a knife inserted in the center comes out clean, about 30-35 minutes.
Step 10 -Let stand for 10 minutes before cutting.
Step 11 -Serve.
