When a busy day is ahead, a hearty breakfast of Country Ham and Potatoes is required. Salty, fatty ham is fried to perfection in a scoop of buttery deliciousness. And to think, it gets better: starchy potatoes are tossed in the mouth-watering ham drippings and sprinkled with fresh parsley. Country Ham and Potatoes will leave your belly full so you can focus on all of the day's to-dos.
Ingredients
- 3 tablespoons butter
- 2 pounds ham, fully cooked and sliced into 1/2-inch pieces
- 1 1/2 pounds of potatoes, peeled, quartered, and cooked
- parsley, to taste
Directions
Step 1 -In a large skillet over medium-high heat, add the butter and ham.
Step 2 -Brown the ham on both sides until heated through, about 2-3 minutes per side.
Step 3 -Move the ham to one side of the skillet and add the potatoes.
Step 4 -Brown the potatoes in the ham drippings until tender, about 6 minutes.
Step 5 -Sprinkle the potatoes with the parsley.
Step 6 -Plate and serve.
