There's something truly compelling about Chili For One. There's no pressure to impress anyone but yourself; no need to even set the table if you don't want. It's just about you, your happy taste buds, and your full tummy. Let the spicy, thick chili with its savory bites of turkey and hearty black beans warm you from head to toe. Chili For One is about taking some time for you... it's self-care at its most delicious!
Ingredients
- For the chili:
- 2 teaspoons olive oil
- 1/2 cup onions, chopped
- 1 small yellow or red bell pepper, chopped
- 1 clove garlic, minced
- 5 ounces ground turkey
- 1/2 teaspoon Italian seasoning, plus more, to taste
- 1/4 teaspoon smoked paprika, plus more, to taste
- 1/4 teaspoon kosher salt, plus more, to taste
- 1/8 teaspoon coarsely ground black pepper, plus more, to taste
- 1 (15-ounce) can diced tomatoes
- 1/4 cup canned black beans, rinsed and drained
- Optional, for topping:
- cheese, to taste, of your choice, shredded
- sour cream, to taste
- tortilla chips, to taste
- cilantro, to taste, chopped
Directions
Step 1 -In a medium-sized skillet over medium heat, add the olive oil.
Step 2 -Add the onions and the bell peppers to the hot oil and cook, while stirring, for 2 minutes.
Step 3 -Add the garlic to the onion mixture and cook, while stirring, until the onions are translucent and the garlic is fragrant, about 1 minute.
Step 4 -Add the ground turkey to the onion mixture and cook, while stirring and crumbling the meat, until the turkey is no longer pink, about 8 minutes.
Step 5 -Add 1/2 teaspoon of the Italian seasoning, 1/4 teaspoon of the paprika, 1/4 teaspoon of the salt, and 1/8 teaspoon of the black pepper to the turkey mixture and stir to combine.
Step 6 -Add the tomatoes and their juices and the black beans to the turkey mixture and stir to combine.
Step 7 -Bring the chili mixture to a boil.
Step 8 -Lower the heat and allow the chili mixture to simmer until it thickens, about 10 minutes.
Step 9 -Taste the chili mixture for seasoning and add the extra Italian seasoning, the extra paprika, the extra salt, and the extra black pepper, as needed.
Step 10 -Serve topped with your favorite toppings.
