Traditional lasagnas are delicious, but can take hours to make. These Chicken Alfredo Lasagna Roll-Ups can be prepared in just one hour making them a little less time intensive, but just as yummy. Tomato sauce is swapped for creamy, cheesy alfredo sauce, and the noodles are rolled instead of layered. Adding spinach gives Chicken Alfredo Lasagna Roll-Ups a bit more balance and interest, so you’ll want to eat them even more.
Ingredients
- 10 lasagna noodles
- 1 (16-ounce) carton ricotta cheese
- 1 1/2 cups spinach, optional
- 2 cups mozzarella, shredded, plus more, to taste, for topping
- 1 cup parmesan, shredded, plus more, to taste, for topping
- 1/2 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 3 cups chicken, cooked and shredded
- 1 1/2 cups Alfredo sauce
Directions
Step 1 -Bring a pot of water to a boil.
Step 2 -Add the lasagna noodles and cook until al dente, according to the package instructions.
Step 3 -Drain the water from the pot and place the noodles on a flat surface on parchment paper.
Step 4 -Preheat the oven to 350 degrees F.
Step 5 -In a large bowl, combine the ricotta cheese, the spinach, the shredded mozzarella, the shredded parmesan, the onion powder, the salt, the garlic powder, and the Italian seasoning.
Step 6 -Add in the chicken.
Step 7 -With the lasagna noodles on a flat surface, spread 3 ounces of the chicken mixture on each noodle, leaving 1/3 of the noodle empty.
Step 8 -Top the chicken mixture with 1-2 tablespoons of the Alfredo sauce evenly across the noodles.
Step 9 -Roll up the noodle, starting at the end of the noodle and rolling towards the empty end.
Step 10 -Add 1/4 cup of the Alfredo sauce to the bottom of a casserole dish.
Step 11 -Place each of the rolled lasagnas into the casserole dish.
Step 12 -Pour the remaining Alfredo sauce over top of the rolled lasagna.
Step 13 -Top with the shredded parmesan and the shredded mozzarella cheese.
Step 14 -Cover the dish with aluminum foil and bake for 20 minutes.
Step 15 -After 20 minutes, remove the aluminum foil and bake again until the cheese is melted, about 10 minutes.
Step 16 -Serve hot!
