When you need to mix up your morning routine a bit, this little sweety is the perfect way to do it! Berry Good Oatmeal Bake is the delicious combination of things you love all in one spot. A layer of lightly sweetened oatmeal is topped with mixed berries and an almond-oat crumble, then baked until golden for a breakfast everyone will look forward to. Get off to a great, mouthwatering start with Berry Good Oatmeal Bake. Sorry, we have to say it... it's berry good!
Ingredients
- For the oatmeal:
- 1 1/4 cups old-fashioned rolled oats
- 1 tablespoon light brown sugar
- 1/8 teaspoon kosher salt
- 1 2/3 cups unsweetened almond milk
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon pure almond extract
- For the almond-oat crumble:
- 1/3 cup almonds, sliced
- 1/3 cup old-fashioned rolled oats
- 2 tablespoons light brown sugar
- 1 tablespoon unsalted butter, melted
- 1 tablespoon whole-wheat pastry flour or unbleached all-purpose flour
- 1/2 teaspoon pure vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon kosher salt
- 2 cups frozen berry medley, such as blackberries, blueberries, strawberries, and raspberries, thawed
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease an 8-inch square baking dish.
Step 3 -In a large bowl, add 1 1/4 cups of the rolled oats, 1 tablespoon of the light brown sugar, and 1/8 teaspoon of the kosher salt and stir to combine.
Step 4 -In a medium bowl, add the almond milk, the egg, 1 teaspoon of the vanilla extract, and the almond extract and whisk to combine.
Step 5 -Add the almond milk mixture to the rolled oat mixture and stir well to combine.
Step 6 -Evenly add the oatmeal mixture to the prepared baking dish.
Step 7 -In a second large bowl, add the almonds, the remaining rolled oats, the remaining brown sugar, the butter, the flour, the remaining vanilla extract, the cinnamon, and the remaining kosher salt and stir until it is evenly combined.
Step 8 -Evenly arrange the mixed berries over the oatmeal mixture and sprinkle with the almond-oat crumble.
Step 9 -Bake the oatmeal bake until it is lightly browned and just set, about 50 minutes.
Step 10 -Transfer the baking dish to a wire rack and let the oatmeal bake cool, about 10-15 minutes.
Step 11 -Serve.
