Barbie's® Whipped Cheese is a dip that definitely belongs in the kitchen of a dream house; it certainly makes for a dream-house party! Creamy, tangy goat cheese is whipped until smooth, sweet, and so spreadable, and mixed with tart-and-vibrant cranberries for a full pop of flavor! Served with crackers and notes of ruby pomegranate, Barbie's Whipped Cheese is just fantastic and fashionable!
Ingredients
- For the whipped cheese:
- 1/2 cup fresh cranberries
- 2 tablespoons pomegranate juice
- 1 tablespoon sugar, can substitute honey or maple syrup
- 1/2 teaspoon fresh lemon zest
- 1 (11-ounce) goat cheese log, room temperature
- salt, to taste
- fresh cracked pepper, to taste
- Optional, for serving:
- 2 tablespoons pomegranate arils
- fresh rosemary sprigs, to taste
- bagel chips, to taste
- fresh cracked pepper, to taste
Directions
Step 1 -In a saucepan over medium heat, add the cranberries, the pomegranate juice, the sugar, and the lemon zest and stir to combine.
Step 2 -Bring the cranberry mixture to a simmer and cook until the cranberries have broken down and the mixture is thick and saucy, about 10 minutes.
Step 3 -Transfer the cranberry mixture to a bowl and allow it to cool completely.
Step 4 -In a food processor, add the goat cheese and pulse until it is smooth and no longer crumbly. Continue to process the goat cheese until it is whipped and very smooth.
Step 5 -Add the salt and the fresh cracked pepper to the goat cheese and pulse to combine.
Step 6 -Add the cranberry sauce mixture, in fourths, to the whipped goat cheese and pulse after each addition until combined. Process the cranberry sauce mixture with the goat cheese until it is smooth or leave it slightly textured, as desired.
Step 7 -Transfer the goat cheese mixture to a jar or a bowl and cover it.
Step 8 -Refrigerate the goat cheese mixture for at least 8 hours and up to overnight.
Step 9 -Top the whipped goat cheese with the pomegranate arils, the fresh rosemary, and more of the fresh cracked pepper.
Step 10 -Serve with the bagel chips.
