Authentic German Meatloaf is different from the traditional meatloaves you might have tried before, but trust us; it stills brings great flavors in all the right ways! The beef is still tender, savory, and flavorful, but now it is infused with zesty paprika and sour pickles for distinctly contrasting flavors. Over the top is not a ketchup glaze, but a rich melted butter brushed right into the meat. So Authentic German Meatloaf is meaty and enchanting, and definitely a delicious twist on a favorite!
Ingredients
- 3 slices white bread
- 1 cup milk, warm
- 4 pounds lean ground beef
- 1 cup plain breadcrumbs
- 1 large onion, finely diced
- 8 slices bread and butter pickles, finely diced
- 1 tablespoon garlic paste
- 2 tablespoons pickle juice
- 1 tablespoon coarse kosher salt
- 1 teaspoon coarse black pepper
- 2 teaspoons paprika powder
- 2 eggs
- 1 bunch fresh parsley, optional, chopped
- 1 tablespoon yellow mustard
- 1 tablespoon butter
- mixed vegetables, of your choice, optional, to taste, cooked and warm, for serving
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -Grease a 9x13-inch casserole dish.
Step 3 -Cut the bread into cubes.
Step 4 -Soak the bread cubes in the warm milk.
Step 5 -Add the ground beef, the breadcrumbs, the onions, the pickles, the garlic paste, the pickle juice, the salt, the pepper, the paprika, the eggs, the parsley, and the mustard to a bowl.
Step 6 -Squeeze the milk out of the bread.
Step 7 -Add the soaked bread to the bowl and knead the mixture together until well-combined.
Step 8 -Add the meat mixture to the prepared dish and shape it into a loaf.
Step 9 -In a small microwaveable bowl, melt the butter.
Step 10 -Bake the meatloaf until the meat reaches at least 145 degrees F, about 45-60 minutes. Every 15 minutes during baking, brush the meatloaf with the melted butter.
Step 11 -Serve hot with the mixed vegetables.
