When a gathering is coming up, you just know Auntie will get the party started with Auntie's Famous Greek Baked Beans... and we're all thrilled about that! Her perfectly seasoned, creamy butter beans are simmered with sweet carrots, crisp celery, and diced tomatoes, then it all gets topped with creamy, sharp feta cheese for a flavorful pop. By popular demand, Auntie's Famous Greek Baked Beans are always a welcome sight whenever there is a shindig!
Ingredients
- For the beans:
- 1/8 cup extra-virgin olive oil
- 1/2 large onion, roughly chopped
- 1 large carrot, peeled and roughly chopped
- 1 stalk celery, roughly chopped
- 2 large cloves garlic, minced
- 1/2 teaspoon kosher salt, divided, plus more, to taste
- 1 (15-ounce) can diced tomatoes
- 6 tablespoons water
- 1/4 cup flat-leaf parsley, chopped
- 1/2 tablespoon fresh thyme leaves
- 3/4 teaspoon dried oregano
- red pepper flakes, optional, to taste
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon ground cinnamon
- 1 bay leaf
- 1 (15-ounce) can butter beans, drained and rinsed
- Optional, for serving:
- extra-virgin olive oil, to taste
- flat-leaf parsley, to taste, chopped
- feta cheese, to taste, crumbled
- rustic bread, to taste, sliced
Directions
Step 1 -Move an oven rack to the middle position.
Step 2 -Preheat the oven to 375 degrees F.
Step 3 -In a large oven-safe skillet over medium-high heat, add 1/8 cup of the extra-virgin olive oil until it is shimmering.
Step 4 -Add the onions, the carrots, the celery, the garlic, and 1/4 teaspoon of the salt and cook, stirring frequently, until the vegetables soften, about 5-7 minutes.
Step 5 -Add the diced tomatoes and their juices, the water, the remaining 1/4 teaspoon of the salt, 1/4 cup of the parsley, the thyme, the oregano, the red pepper flakes, the black pepper, the cinnamon, and the bay leaf to the vegetable mixture and cook, while stirring frequently, until the mixture comes to a simmer.
Step 6 -Increase the stovetop heat to high.
Step 7 -Add the beans to the vegetable mixture and cook, while stirring frequently, for 5 minutes.
Step 8 -Taste the bean mixture and add the extra salt, as needed.
Step 9 -Transfer the bean mixture to the oven and bake until it is thickened, and the top layer turns a light golden-brown, about 20-30 minutes.
Step 10 -Transfer the bean mixture to a wire rack.
Step 11 -Remove and discard the bay leaf.
Step 12 -Garnish the beans with the remaining extra-virgin olive oil, the remaining parsley, and the feta.
Step 13 -Serve the beans with the rustic bread.
