Sweet Italian sausage crumbled in a perfectly seasoned creamy parmesan cheese sauce, then tossed with al dente pasta and wilted spinach (and topped with even more parmesan cheese), gives you everything you love and more. When pasta is on the mind, let All-In Penne curb your wants and needs with its all-inclusive collection of flavors. It's all you've ever wanted in an Italian dish!
Ingredients
- 1 (16-ounce) box penne
- 3/4 cup sun-dried tomatoes in oil, drained with 2 tablespoons of the oil reserved, tomatoes sliced crosswise
- 1 pound bulk sweet Italian sausage
- 1 small yellow onion, finely chopped
- 2 large cloves garlic, finely chopped
- kosher salt, to taste
- 2 cups heavy cream
- 5 ounces baby spinach
- 1/4 cup parmesan cheese, grated, plus more, to taste, shaved, for serving
- 1/2 cup fresh basil or parsley leaves, chopped, for garnish
Directions
Step 1 -In a large pot of salted, boiling water, cook the pasta to al dente, according to the package directions.
Step 2 -Drain the water from the pasta and return it to the pot.
Step 3 -While the pasta is cooking, in a large, heavy skillet over medium-high heat, add the reserved sun-dried tomato oil.
Step 4 -Add the sausage to the heated oil and cook, while crumbling, until the sausage is browned, about 8-10 minutes.
Step 5 -Add the onions, the garlic, and the salt to the sausage and cook, while stirring occasionally, until the onions are tender, about 5-7 minutes.
Step 6 -Add the sun-dried tomatoes to the sausage mixture and cook, while stirring continually, until warmed through, about 1 minute.
Step 7 -Add the heavy cream to the sausage mixture and bring it to a simmer.
Step 8 -Cook the sauce mixture, while stirring occasionally, until the sauce has slightly thickened, about 2 minutes.
Step 9 -Transfer the sauce from the stovetop to a wire rack.
Step 10 -Add the spinach to the sauce and stir until slightly wilted.
Step 11 -Add 1/4 cup of the parmesan cheese to the sauce and stir to combine.
Step 12 -Add the drained pasta to the sauce and toss to combine.
Step 13 -Top with the extra shaved parmesan, garnish with the basil, and serve.
